You cannot always prevent crystallisation forever, but good storage can slow it. The simplest rule is to keep the jar sealed, shaded, stable and spoon-dry.
What temperature is best for storing honey?
The National Honey Board’s reference guide recommends storing honey in a sealed container at approximately 18–24°C. It also notes that cooler conditions of around 2–16°C hasten crystallisation, while prolonged temperatures above 29°C may darken honey and subtly alter its flavour.
In Singapore, 18–24°C may not be realistic in every kitchen. Treat it as a useful reference, not a household exam. Choose the coolest stable indoor cupboard you have.
